Green Soup. Make it and Love it.

My friend sent me this recipe and when I first looked at it I was skeptical. The only time I consume that much green, mixed all together, is in a smoothie. This is by far the greenest soup I have ever made, andddddd it was so good!

The problem: My camera man hates onion, and this recipe calls for a lot of them. I usually avoid onions or purée the heck out of them so that they are no where to be found. The onions in this soup, however, play a huge part. There is no hiding them. So if you are not a fan of onions, beware!  But OMG this soup is awesome. Go make it. Eat it. And love it.

Butternut Squash.. DELISH!

OK. Go buy butternut squash and bake it. It is so good!!!  Squash  is also rich in calcium, magnesium, potassium, and vitamins B6! My cousin from a far away land emailed me a salad recipe. One of the ingredients in the salad is baked butternut squash. I had intentions of making this salad and blogging about it, but could not get past step one in the directions! I could not stop myself  from  eating the warm, baked, butternut squash. It was SO GOOD! I put NOTHING on it. Just baked it at 375 degrees for about 30 min- to an hour (or until a fork will easily go through it). Do not rush the baking process.

I tried the butternut squash plain, and then I dipped it in my favorite ketchup. YUM!  Below is a comparison of sweet potato and butternut squash. They are both delicious and  healthy but have their differences!

My family loves to entertain. I think both my mom and my dad make a great team when cooking. They always seem to create healthy, delicious, and interesting dishes. Here was our last BBQ menu:

Quinoa Salad

We mixed red quinoa (more fiber) and regular quinoa together then added avocado, tomatoes, fresh corn, cilantro, and black beans. This quinoa salad has a mexican feel to it!  Check out another Quinoa veggy Salad here!

Delicious Orange Glaze Salmon!

ingredients:

  • 1 lb salmon
  • 1/2 c orange marmalade
  • 1/2 tsp freshly grated  ginger
  • 2 tbs lite soy sauce
  • 2 tbs sesame oil
  • 1 crushed garlic clove
  • chopped scallions (optional)

mix ingredients together (not scallions) and let it sit on salmon for an hour

directions:

bake at 350 for 25 minutes or grill it!
