I am back from Iceland and Ireland!!!  What a trip! I absolutly loved both places.  I went with my camera man, brother and sister in law. We started in Iceland- spent three days there and finished our trip in Ireland.

First stop in Ireland: Kilkenny

We had the best burgers so close to where we were staying:  Gourmet Burger Bistro. Seriously awesome. So many different options and creative burgers. I got a falafel burger (vegetarian) and split that with my sister in law who got the lamb kebab burger. Both so so so delicious. All burgers are 100% organic and local meat!

I had read about the English market in Cork before arriving to Ireland. It was a place I wanted to visit. I ended up getting a green juice, organic raw almonds and delicious dried apricots. Perfect midday snack.

Kinsale:

About 30 minutes south of Cork was my favorite part of Ireland thus far: Kinsale. It's right on the water and has cute little shops and great views. It is sister cities with Newport Rhode Island!

We had breakfast at a great breakfast place Called Lemon Leaf Cafe. The food was good but my favorite part was the fresh fun bright vibe!

On our way back to Cork from Kinsale we stopped in Blarney. There is a famous Blarney Stone and a beautiful view at the top of the castle. It is said that if you kiss the Blarney Stone you will be eloquent for life. We waited in line for 15 minutes and heard it was about an hour wait to get to the top. As a group we agreed that we rather not wait in line. Instead we explored more and found the Blarney house on the same campus. It was so beautiful and no one was there. It felt like it was a pirvate viewing just for us. We took some jump selfies outside the house- one of my favorite memories.

The weather was cold-ish and this is by no means a glamorous vacation. We hiked, did plenty of walking and drove to a lot of different sites. We slept in five different beds! This, however, has been an amazing trip. The views and landscapes are amazing. The little towns and bright colors are so fun and up lifting. I would 100% come back and explore again. 

DUBLIN: We only spent one day in Dublin. Next time I visit Ireland I would like to spend more time there. It seems like a fun city!

From a friends recommendation we went to a great cafe called Queen of Tarts. Super breakfast and pastries. There are two locations very close to one another. I suggest you find the one with outdoor seating!

We of course toured the Guinness factory, and learned how to pour the perfect pint!

We had dessert after almost every meal! I love sitting at cafes drinking coffee, eating dessert, and talking some deep talk.

I was open to, and tried, traditional Irish food but I also made sure to get in my veggies whenever possible.  I got this salad in Dingle at McCarthys Pub. It was so good and was made from a mixture of greens, veggies, nuts, cheese and hummus! Not what I picture when I think "pub food" .

My Favorite Way To Start The Day

I know that we are all busy with work and just life in general and the few days we may have "off" usually do not include YOU time. Your day off may mean meeting up with friends, doing laundry, seeing family, picking up your dry cleaning, cleaning out your fridge where you may possibly find month-old almond milk (I am not judging) ... and the list goes on.

However long our lists, I always think that making time for YOURSELF is super important, even if it is just 10 minutes. My favorite way to start my day is to take an awesome walk. This time allows me to plan out my day, take in some air, and get my blood flowing. I also do not mind if Camera Man joins along :)  

How to start your "day off" off right: 

TIP 1. Put on real clothes when you wake up. I find that the faster I get out of my pj's the more productive I am. In the images below I documented one of my morning walks. I am wearing a fabulous outfit Athleta sent me. 

Exertion Bralette: This Bralette is super cute. I just love it. I am wearing it in this KILLER ABS video:

It holds me well and gives the girls a little lift, who doesn't love that?! It is simple to match due to the black and white color and the criss cross feature in the back is my favorite. 

Tropic Aliso Pant: These pants are awesome! I wore them to class one day and got plenty of compliments. They are light, breezy, and have POCKETS! Great for walks since no purse is needed. You can stick everything in your pant pockets!

Above: Later, after my breakfast and some errands, I took a class at a studio near my home. I love taking other peoples classes. Other teachers inspire me, and even if I learn just one new thing it is worth it! 

Mesh Pullover:  I wear this pullover maybe too much! It is so easy to dress up or down and it is great for a chilly day in the warmer months.

TIP 2. Walk to your center (if you live in a city or in a town with a walkable center) OR find a park or a bike path that you can drive to. You can even take a skip around your neighborhood; it does not have to be a crazy fancy walk or have greenery for it to be effective.

I started my walk on a bike path and ended up in Davis Square. I was parched so I stopped along the way to grab an iced coffee at Diesel cafe.

I love cinnamon in my iced coffee and if I am feeling really crazy I'll add in some cocoa and vanilla. WHAT? Try it.

TIP 3. Your walk does not have to be long. Take 10 minutes you will feel great! (however, I am NOT opposed to long walks)

TIP 4. When you get back home have a super breakfast, green juice, smoothie or anything that will continue to energize you for your day.

After my walk I made myself eggs with turmeric and pepper, toast with almond butter, sliced cucumbers, and an arugula salad with EVOO and lime juice. 

BAM. Carpe diem.

Easy (and delicious) Baked Falafel

 I really enjoy falafel. The two best falafels I ever had were in Israel and the Jewish quarter in Paris. I have never tried to make Falafel at home because deep frying things is messy and not really my thing. But baking things, I love baking things. This recipe is the bomb dot com (Amy if you are reading this, that was for you).

This recipe is so good. I mean SO good! Camera man approved, and we all know how critical he is. I literally just ate a plate of falafel. Next time I will either put it in a pita with all fun veggies, or make it with a great side salad: cucumber and tomatoes diced very small with EVOO and lemon juice. Something like this.

Ingredients

  • 1 Cup Raw garbanzo beans (aka chick peas) these beans will be soaked in water for at LEAST an hour- over night is great. DO NOT USE CANNED BEANS- it will NOT work for this recipe. 
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh parsley leaves
  • 1 tsp cumin
  • 1 tsp coriander (if you do not have coriander do not worry- just skip it)
  • 1/2 tsp turmeric
  • 1 tsp salt
  • 3 garlic cloves minced
  • 1/2 small onion or 1/4 of a medium diced
  • 2-3 tbs EVOO

Directions:

  • preheat oven to 375 (I like to put the pan in the oven so it is hot when you put the falafel on it)
  • soak beans for at least an hour -or overnight in water
  • drain beans and rinse
  • dice onions and garlic
  • put everything in food processor: beans, oil, onions and garlic, dry spices cilantro and parsley
  • mix for about 1-2 minutes or until it is well mixed
  • Take the pan out let it cool off just a little. Add a generous amount of EVOO to the pan. Make little balls with the falafel mixture. Mixture will be softer than you expect it to be. Do not worry if it is a little runny.
  • Bake the balls for 15 minutes - turn them over with spatula and bake for another 10-12 minutes. You want a little browning on top.

TAHINI DRESSING:

This dressing is very versatile and it can be used as a salad dressing or you can dump it  right into a pita wrap filled with falafel and veggies. Or you can dunk your falafel right into the dressing like I did!

I might need to perfect this dressing a bit but I think this works:

  • juice from 1 large lemon
  • 2 tbs of tahini
  • 1/2 tsp salt
  • 1/4 cumin
  • a little water to get it mixing and some EVOO (pour maybe 2 TBS of EVOO and as much water as you think to make it the consistency you want. Maybe 1/4 cup ?)
  • sometimes garlic powder is good!
  • BLEND TOGETHER :)

I rarely ever measure the dressing and I kind of just go for it! Play around with this dressing recipe or look up another one that you like. Let me know how it goes! How did you eat your falafel?

Whole Wheat Couscous with Cherries & Arugula.

Incase you didn't see the recipe that I posted on Instagram and Facebook I thought I would share with you an easy and yummy couscous salad I made recently.  I made a few changes like taking out the cheese and adding more EVOO at the end.

I love arugula. It is my staple green along with spinach and kale. Arugula salads are the best. Mix it with some EVOO, lemon juice, fresh parm cheese and pine nuts and you are good to go. I made this for lunch today:

  • arugula
  • hard boiled egg
  • apples
  • cucumbers
  • avocado
  • evoo - balsamic - lemon juice - turmeric - pepper
