How To Make Homemade Cashew Milk

Homemade cashew milk is so freaking good and so easy to make. I also love making my frozen bananana cashew milk smoothie. I will give you both recipes!

CASHEW MILK

ingredients:

  • 1 cup raw cashews
  • 4 cups water (maybe a little less for more creamy milk)
  • 1 large bowl
  • cheese cloth (I doubled mine)

optional EXTRAS (pick and choose!):

  • cinnamon
  • ground powdered ginger
  • turmeric
  • 1 date (pitted and soaked to soften)
  • vanilla extract
  • whatever floats your boat

directions:

  • soak cashews in water for 4 hours to overnight
  • drain cashews and rinse until water runs clear
  • blend cashews with 4 cups of water (I put a little less) - Each blender is different but I would say about two minutes on high. Let it rock and roll in there. You want it to look like milk, so don't rush it!
  • Pour the milk ( preferably in a  doubled cheese cloth) and squeeze out into a large bowlI learned the hard way and made a mess trying to squeeze the milk out into a cup.

*TIP: Pour the milk part by part in the cheese cloth and slowly work/squeeze  the milk through. This will take a little time but squeeze as much milk out before you add more milk to the cloth. 

You will be left with the "cashew pulp". I usually toss mine but I bet you can find something to do with it.

Making nut milk is so fun and you can get creative with it! You can leave it very simple with just the nuts and water blended and it tastes great, or to make the cashew milk a little more interesting you can add in some "extras" during the blending process .

FROZEN BANANA CASHEW MILK SMOOTHIE

Base of smoothie (you can leave it simple and delicious just like this or add on extras below). I could not be more obsessed with this smoothie. You will LOVE IT!

  • 1 cup cashew milk
  • 1 FROZEN banana
  • Blend

Pick and choose your add ons: (I would blend the "add ons"  with the milk and banana).

  • cinnamon
  • ginger
  • turmeric
  • maple syrup
  • vanilla extras
  • 1 date softened and pitted (for extra sweetness)
  • What else would you add?

Avocado Toast. Have you tried it?

It is so simple, yet so amazing. Avocado is the absolute best. So many good fats and so filling! I eat it every day.

I was in NYC this weekend to visit my gal pals since elementary school.

NYC is always a blast. We stayed out til 4am and danced the night away.

During the day we explored, shopped and ate. We went to a cool industrial/vintage/chic restaurant for brunch in Brooklyn. I came across avocado toast on the menu and got SO excited. I eat avocado on toast at home but I have never seen it on a menu! I of course ordered this as part of my meal and split it with everyone at the table just so we could all share in my joy.

The toast was topped with cilantro and pickled onions. My friend who lives in NYC said that avocado toast is common, yet I have never seen it in Boston!

I'm Back From My Getaway!

I soaked up the sun, dug my feet in the sand, and dunked my body in the clearest water ever; and I feel alive again!!!!

Camera Man and I took a 5 day trip to Turks and Caicos. We did a lot of eating yummy food and managed to stay pretty darn active. We paddled boarded, did AM yoga and night time Pilates, we walked this awesome 2 mile trail and worked out in the beautiful sunny resort gym.

We ate colorful salads- and even better desserts! Thumbs up the the pastry chef!

The Salad above is called the BIG salad. I got this 3 times! It was an assortment of all different veggies. I love how they were spiralized!

Breakfast was my favorite. There was an assortment of juices to pick from, all so fresh and delicious. Every morning I had a juice, or two, and two eggs over medium. And for breakfast dessert,  yes breakfast dessert, I would have a chocolate croissant! They were SO good!

I practically lived in the cover up shown below. I got it from VS. It is so soft and light weight but covers just the right mount. I could tie it tighter and close it more if I wanted to. Bah, I just looked at the site and no longer see it! Maybe you will have more luck.

While we were on the beach I of course made a video for you! I filmed early in the AM, so we were interrupted by the "seaweed patrol' watch the video.. and laugh!

Creamy Cashewmilk Smoothie

My two favorite kind of nuts are almonds and cashews. You will always find them in my pantry. I also love making my own almond and cashew milk, but sometimes I don't have the time. That's where Silk Cashewmilk comes in hand! Silk Cashewmilk is gluten, dairy and soy free and has 25% fewer calories than skim milk. It is so creamy and makes the best cashew milk smoothie!

Ingredients:

  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp turmeric
  • 1 frozen banana (if it's not frozen that is ok! I like to peel and freeze my over ripe bananas for smoothies)
  • 1 Cup Unsweetened Silk Cashewmilk (I opt for the unsweetened version because the banana will add your natural sugar)
  • 5 ice cubes

Directions:

Place all ingredients in blender. Blend away until creamy smooth. There may be some mini ice chunks but I like that little crunch in my smoothie. Enjoy! What is your favorite  smoothie mixture?
