Super nutrient rich mung beans are even more nutritious once you sprout them. You can eat them on top of salads, soups, wraps, or on top of your stuffed sweet potato- like I am going to do now!
Soak beans for 6-8 hours in a large bowl of water. Keep in mind the mung beans will expand. Drain the beans and place in a strainer in a space that is not in direct sunlight. Rinse every 12 hours for the next 2-3 days, placing the beans back in a spot that is not in direct sunlight (think corner of your kitchen). Sprouting should happen within the 2-3 days and itβs verrrrry exciting.
Some of the beans might not have sprouted, so pick them out and donβt break your teeth ;)
