Butternut Squash and Apple Soup

It's that time of the year again! Soup making has begun. I really enjoy making soups because they are so easy to make/eat, they are satisfying and go with really anything. You can have it as a snack, main meal or side dish. Get ready because in the next few months you will be getting a lot of new soup recipes from me!!

This butternut squash soup is so delicious and it is one of my favorite soups to make majorly because of the amazing smells that come out of my oven during the baking process.

In this recipe you will notice some green apple in the soup. Green apple gives the soup a subtle kick without being overwhelming. I also like adding chili powder.

Ingredients: 

one large butternut squash

one medium onion

3-5 carrots

one medium green apple

3 cups of broth it can be chicken or veggie

EVOO about 3 tbs

cinnamon

chili powder

cumin

salt  

I didn't measure the spices out exactly but I would say about 2 teaspoons of each-  more of the cinnamon less of the chili powder and even less of the cumin. 

 

Directions :

preheat oven to 400° 

Peel the butternut squash and chop into cubes

Cut the Apple, carrot and onion

(these veggies will all be baking in the oven and then puréed together so cutting precisely is not really necessary)

In a separate bowl mix together the butternut squash, EVOO , cinnamon, salt and cumin. Coat the butternut squash. Transfer butternut squash on a baking sheet. In the same bowl (less dishes and reusing spices!!) place onions, carrots and green apple and mix together, coating with leftover sauces. If you need to add more of anything go for it! Place these ingredients on a second baking sheet. Place both baking sheets in the oven and bake for about 35- 40 minutes. mix once or twice.

Place a large pot on the stove and add either Ghee or butter. Add in all the roasted vegetables and mix around for about a minute. Add in your broth and bring to a boil. Reduce to a simmer and cover for 20 minutes. Place in a blender or use an immersion blender to purée.  enjoy!!!

Take note:  if you purée in a blender make sure you leave a little space for the steam to escape!!
